Puddings
1 cup Italian rice
milk
instant chocolate or cocoa powder
white sugar
ground cinnamon
Boil rice in a pot of water until rice is cooked, but firm.
Drain rice and return to pot.
Add as much milk as needed to cover rice to one cm above level of rice.
Return to medium heat and add sugar and cocoa powder to taste. You can make it as sweet and chocolaty as you like.
Continue stirring and watch pot so as not to scald milk.
As soon as milk starts to boil remove from heat and serve. Sprinkle cinnamon on top of serving dishes and garnish with milk chocolate chips if desired.
